You might be surprised and think that an Air Fryer is a healthier deep fryer substitute which it is but you can also use it to bake, like this lemon cake.

In that respect, an Air Fryer is more an oven substitute than a deep fryer substitute and also way easier to clean than an oven.

  • Fry – the fry basket comes standard with an Air Fryer and can be used to fry french fries, croquettes, potato wedges
  • Grill – Swap the regular basket for this grill pan. Use it to grill your burgers or steak. When you have an Air Fryer XXL you can use this grill plate
  • Roast – When you prepare recipes that have a lot of fat or that can splatter like roasted chicken use this special roasting pan. It has a lid that prevents fat from splattering against the heating element. You can also use it to make popcorn, dry fruit or vegetables, or roast your coffee beans. As an Air Fryer can swirl your ingredients through the base this lid prevents that and comes in handy. This should be your go-to basket
  • Bake – You can use your regular basket or the basket with a lid to bake. When there is a chance the ingredients can swirl a lid prevents the ingredients to touch the heating element of the Air Fryer
  • Party set – a set of skewers and a rack to grill your chicken skewers or kebob skewer on. Just put the rack inside the Air Fryer and put the skewers on top

As we do not need to worry about any splattering when baking a cake and the cake pan doesn’t fit in the roasting pan we use the regular Air Fryer basket.

Air Fryer Lemon Cake Ingredients

To make this lemon cake you need several ingredients mostly pantry staples.

Have the following ready when you start:

  • Soft butter
  • Margarine
  • Granulated sugar
  • Eggs
  • Lemon juice
  • Cake flour
  • Baking powder
  • Vanilla extract
  • Salt

Use cake flour or make your own cake flour using this recipe. This makes your cake taste even better.

How To Make Air Fryer Lemon Cake

Preheat the Air Fryer to 320℉ for 5 minutes.

Take a large mixing bowl and add the butter, margarine, vanilla extract, and sugar.

Beat the ingredients with a mixer or whisk until light and creamy this takes about 5 minutes.

Add the eggs and beat them into the butter one by one. Add the second egg when the first egg is incorporated into the mix.

Then you can add the cake flour, baking powder, lemon juice, and a pinch of salt. I put the flour through a mesh strainer while I add it to the bowl.

Mix thoroughly until all the flour is incorporated and no lumps are visible.

Take some soft butter to butter the cake pan. Cut a circle from parchment paper and put it in the cake pan.

Pour the batter into the cake pan and use a spatula to smooth the surface. Put the cake pan in the fryer basket and put the basket into the Air Fryer.

Set the timer to 25 minutes and bake the cake until it is done and brown.

Take a bamboo skewer or toothpick and insert it into the center of the cake. When the bamboo skewer comes out clean your cake is done.

Let the cake cool in the pan for 5 minutes so the cake will shrink and release easier. Turn the cake out onto a wire rack to cool.

The Best Way To Store Air Fryer Lemon Cake

There are several ways to store your Air Fryer Lemon Cake. In all cases let your cake cool completely first.

This makes it easier to slice. When sliced store it straight away. Do not leave it uncovered as the cake will dry out very fast

  • Airtight food container – slice the cake and stack the slices in a food container. Put it in the fridge or freezer
  • Ziploc resealable bags – again cut the cake and take several ziplock bags. When done store them in the refrigerator or freezer
  • Cling film – wrap your cake in plastic wrap to keep all the moisture inside
  • Aluminum foil – again slice your cake and take pieces of foil to either wrap the cake slice individually or with more than one

The benefit of cutting and storing your cake is you can serve the number of slices of cake that you need.

How Long Does Lemon Cake Last

A lemon cake can last from a couple of days up to a couple of months. It all depends on the storage method:

  • Room temperature – a lemon cake lasts between 3 to 4 days when you leave it outside of the refrigerator
  • Refrigerator – when you store a cake in the refrigerator wrapped in cling film it lasts for 4-5 days

Why Is My Cake Wet In The Middle?

When your cake is wet in the middle your cake isn’t cooked long enough, the temperature could be too low.

It can also be a combination of both. So, either increase the cooking time by 5 minutes and you can also increase the temperature.

Check again to see if the middle of the cake is not wet anymore.

Just like with an oven every type of oven is different. The temperature and timing can differ hugely.

This also applies to Air Fryers. So, it is always a good idea to experiment and test to see how hot your oven or in this case Air Fryer gets.

You can use this oven thermometer to check the temperature in your Air Fryer. Set it inside the Air Fryer and cover it with a rack to secure it.

Check the temperature after 5 minutes to see what the temperature inside the Air Fryer is and if it corresponds with the temperature on your Air Fryer.
